Tannins & Sulfites
What are tannins? I call them wines pucker power. Wines with high tannins are often considered bitter and astringent or called dry mouth wine. It is usually more command in younger wines. They are derived from the skins, stems, and seeds of the grape. The longer they are in contact with the juice the higher the tannins are in the wine. This caused by hard final pressing and poor filtering. They are often described as textual components that dry your mouth while you are drinking red wines. Therefore, you should let a red wine breathe or decant while it completes its final fermentation. Higher tannin wines age better than low tannins wines. Low tannin wines need longer to decant to smooth them out.
